Mississippi Blues

Chris may be singing the blues since the Razorbacks didn't come out on top but we still had a good time experiencing the Ole Miss way of football. Great seats via ebay!

Running into the Havens crew in the Grove...

The jewel of the weekend was Chris Nick's find (at the last minute) for lodging. We drove about 30 minutes from Oxford to Holly Springs and found the Court Square Inn. Totally small town -- a slight notch above Beebe -- but a wonderful B & B in a renovated downtown building. The second best thing about Holly Springs: JB's restaurant just across the square. Think Southern cooking. Here's what we brought home in our doggie bag:

Pics from enjoying our balcony this morning.

Thank you to all the gang who took care of Little C this weekend! Looking forward to seeing everyone in Beebe for Halloween this weekend!

Countdown to Halloween

Before I tell you what Caroline is going to be for Halloween please realize that we looked and looked for a costume for her but couldn't find anything that we thought would work. SO...with that being said and our readers understanding that our choices were very limited...I will tell you that she is going to be a Razorback cheerleader. Of course this is not my first choice -- a plain cheerleader would be fine -- but being a Razorback cheerleader makes Chris very happy so we'll let him get his way THIS year!

Nonetheless, she got to sport her spirit at Zoo Boo this weekend which was a lot of fun, especially since we also had a chance to see Ballet Memphis perform some of the the Wizard of Oz which Caroline loved, and since the Morgans came with us!

"Magic Mr. Nick" is this infamous magician in Memphis that our friend Kelly thinks is hilarious just because of the name so this pic is for her.

Continuing with our ghostly weekend theme we did a little pumpkin carving on Saturday.
Caution: Men at Work...

Ike did some pumpkin eating.

Caroline did some screaming...she did not want to share the tractor with a sleeping baby Rhodes.

The finished product! Yes, one has the state of Texas as its nose...

We couldn't carve pumpkins without also indulging on Pumpkin Pie. Here's one of my favorite easy recipes! Happy soon-to-be Halloween!

Recipe Request: OATMEAL CHOC CHUNK COOKIES

I love this cookie recipe that I snagged from (the now defunct) Cottage Living because it always satisfies my sweet tooth and it makes a bunch! Here's the recipe as requested after I took them to Grace Group last week. Enjoy!

OATMEAL CHOCOLATE CHUNK COOKIES

1 cup butter, softened

1 cup firmly packed brown sugar

1/2 cup sugar

2 large eggs

2 t vanilla

2 cups flour

1 t baking soda

1/2 t salt

3 cups uncooked regular oats

1 bag of semisweet chocolate chips or mega morsels

1 cup toasted pecans (optional)

1. Preheat oven to 350.

2. Beat butter and sugars at medium speed until creamy. Add eggs and vanilla, beating well.

3. In a separate bowl, combine flour, baking soda, and salt, stirring well. Add oats.

4. Add to butter mixture and mix until well blended. Gently stir in morsels and pecans.

5. Drop by tablespoons onto baking sheet lined with parchment paper. Bake for 10 minutes. Let cookies stand 2 -3 minutes before cooling on wire racks.

As you can see, we like them at our house!
